The cuisine of El Salvador is a blend of Native American and Spanish influences, with a focus on maize, pork, and seafood. Some of the most popular dishes are:

Pupusas: stuffed tortillas made of rice or corn flour, filled with cheese, pork, beans, or loroco (a flower bud). They are served with tomato sauce and
curtido (a fermented cabbage salad).
Sopa de mondongo: a soup made of cow’s feet, tripe, and tendons, cooked with corn, cassava, and vegetables.
Yuca frita: fried cassava root, topped with chicharron (fried pork skin) and pepesca (fried sardines). It can also be boiled and served with salads. Panes rellenos: warm sandwiches stuffed with roasted turkey or chicken, tomato, watercress, cucumber, and cabbage.
Pasteles de carne: meat pies filled with beef, potatoes, and carrots, wrapped in corn dough and fried.

Literally meaning painted rooster, Gallo pinto is a favorite rice-and-beans concoction that is commonly considered the national dish of Costa Rica usually eaten for breakfast, sometimes with scrambled or fried eggs, but it is an enjoyable food at any time of day.
Salsa Lizano is a traditional Costa Rican condiment. If you don't have Salsa Lizano™ you can substitute with Worcestershire sauce.
Serves: 6
Preparation time:10 minutes
Cooking time:15 minutes
2 tablespoons vegetable oil
1 medium yellow onion, finely chopped
1 red pepper, chopped
1 tablespoon garlic, finely chopped
2 cups cooked black beans, drained
½ cup Salsa Lizano *
3 cups cooked rice (white, short grain)
½ cup fresh cilantro, chopped
1. Pour oil into large pan and place on medium heat. Sauté onion, red pepper and garlic until onions begin to soften.
2. Add beans and Lizano sauce, a classic Costa Rican condiment. (If Salsa Lizano is not available, mix together 1 teaspoon ground cumin, 1 teaspoon ground coriander, ½ teaspoon ground ginger and 3 tablespoons Worcestershire sauce. Add to onion mix before beans.) Let simmer for 5 minutes, stirring from time to time.
3. Fold in the cooked rice, reduce to very low heat and continue to cook, stirring occasionally, until all liquid is gone and mixture is well heated.
4. Sprinkle in cilantro and serve warm.

1 tbsp olive oil
1 onion, diced
1 carrot, diced
1 stalk celery, diced
1 tsp sea salt
1 tsp fresh cracked pepper
2 cloves garlic, minced
2 tbsp red wine vinegar
1qt vegetable broth
3 leaves bay leaf
2 cups chopped butternut squash
2 cups diced canned tomatoes
1/2 cup quinoa
1 tbsp chopped fresh rosemary
1 tbsp thyme
1 can chickpeas (garbanzo beans), rinsed and drained
2 cups chopped kale, ribs and stems removed
In large saucepan, heat oil over medium high heat. Add onion, carrots, celery stalk, salt and pepper and cook until onions are translucent, about 5 minutes. Add the garlic and red wine vinegar; cook 1 minute.
Stir in broth and bay leaves, scraping any brown bits from the bottom of the pan and bring to a boil. Stir in the squash, tomatoes, quinoa, rosemary and thyme. Reduce heat to maintain a simmer. Cook for 15 minutes or until quinoa is soft.
Add chickpeas and kale and cook for an additional 5 minutes. Serve warm with a drizzle of olive oil.
